Our training kitchen plays a key role in preparing dishes for Samphire Restaurant where you have real customers, giving you real-world experience in a dynamic environment.
At Grimsby Institute it’s not just about learning to cook, you’ll gain valuable experience in front-of-house roles too. From mastering fish, meat and poultry to exploring baking, patisserie and cake decorating, our training covers it all.
Course Details
It's not just about cooking because you will get the chance to be trained in front-of-house and table service roles as well. Practically you will practice and be assessed on all areas from the basics of making stocks, soups and sauces to preparing, cooking and presenting meat, poultry and fish dishes, you will also cover patisserie units that cover such areas as how to prepare, cook and present dough products, pastry and hot and cold desserts. During the course you will also complete several assignments designed to expand your knowledge of the industry and what is needed to progress. This will enable you to find your style that will give you the foundations for a career.
Alongside the training in everything from fish, meat and poultry to baking, patisserie and cake decorating, you'll get the opportunity to be part of our team, giving first-class service and food from our state-of-the-art facilities including the new training kitchen which will be used to produce dishes for the Gallery Restaurant.
At level 2 you will cover all aspects of working as a professional chef and working in restaurant customer service in preparation for specialising in being a chef or front of house professional at level 3.
How will it be delivered and assessed?
When you do a vocational qualification you will learn in a kitchen, workshop, salon or studio as appropriate for your subject and you will usually be assessed through practical assessments, projects, assignments and oral and written questions. There may be exams in some subjects and your tutor will prepare you for these.
Entry requirements
Level 2 – 3 GCSEs at grade 3 or above, preferably including either English or Maths
Your next steps...
Successful students may progress onto the next level in their chosen subject, into employment or an apprenticeship, or, after a level 3 qualification, to Higher Education at the University Centre Grimsby or other other University.
Potential career paths include: Chef; Restaurant manager; Catering manager; Food scientist; Food product development; Waiting staff.
